Let's go for a walk through the apple & pear orchards of our dreams. We'll start with a salad of apples, cracked wheat, Glengarry bleu, toasted walnuts & a cider vinaigrette. We'll also make a kale, apple, old cheddar & bratwurst tart with whole grain mustard sauce.
To change up our traditional pork chops & applesauce we'll prepare a Beau's Tagwerk (quince beer) brined pork tenderloin with a coconut milk, lentil, apple & pear curry. Just to ramp up the flavour let's make a lovely apple & date chutney.
For dessert, Chef Bruce's all time favourite pie; pear, raisin & ginger pie with Sortilege crème anglaise.
