Let's wander through the asparagus patch. We'll roast asparagus & top it with a poached egg & feta vinaigrette, Pan roasted trout will be served with a warm potato & asparagus & radish salad, Asparagus wrapped in quinoa & thyme crepes baked with a Glengarry cheese & mustard béchamel,  & a crostini with chèvre, grilled oyster  mushrooms & asparagus with gremolata

Oh strawberries a sure harbinger of summer. We'll start with a salad of tender greens, La Bergerie des Sables feta, strawberries & spiced almonds followed by Apple brined chicken breast with a strawberry, mint & rhubarb gastrique, we'll also roast cod & serve it with a strawberry, jalapeño & cucumber salsa. For dessert a decadent olive oil pistachio cake with lavender & Ontario vodka soused strawberries.

Let's celebrate a belated National birthday with some of the bounty this country has to offer. Let's start on the East Coast with salt cod cakes & herb spiked tartar sauce, as we travel West let's stop in Québec & savour potted crab from the Gulf of St. Lawrence with shaved radishes & crostini, We'll stop off in Ontario, grab some tomatoes & take them with us to Alberta to enjoy as a salad with pan seared steak & bleu cheese dressing & for dessert we'll head to the Okanogan & enjoy cream scones with boozy cherries, blackberries and a lavender crème anglaise.
